Stuffed French toast

This always conjures up lots of memories for me because my mother would always pack me up for school with peanut butter and banana sandwiches. At the time I thought that my mum was insane and a little cruel as it was a constant source of ridicule for me in the lunch hall, but now I am older I completely get it. If you are obsessed with peanut butter like myself you will absolutely love this. I'm not sure I would ever pack myself up with Peanut butter and banana sandwiches but this is a great breakfast or brunch treat. I feel as though every sunday deserves an extra special breakfast before the monday morning grind begins.

You will need:
4 slices of brioche
1 large egg
1 tsp vanilla
1/2 tsp of cinnamon
a very small pinch of salt
2 tablespoons of caster sugar
70ml of milk
1 large banana
4 tsp of crunchy peanut butter such are skippy
1 tbsp of butter

In a bowl whisk together the egg, milk, sugar, vanilla, salt and cinnamon. 
On each piece of brioche spread a teaspoon of peanut butter, add a layer of sliced bananas and sandwich in between the brioche slices, the idea is that the peanut butter holds the banana in place. Squeeze the sandwich together so that the filling is compact and dip in the sweetened egg mixture, do not dip for too long as it will become soggy.
Place a large frying pan on a high heat and fry each stuffed french bread in a tablespoon of butter until golden brown.
To finish I dust with a little icing sugar and a drizzle of really good maple syrup.
